Sharpening the Tosa Kajiyamura Sashimi Knife

What a satisfying feeling it is to put steel to stone and create something near mythical. We took the Tosa Kajiyamura brand sashimi knife, sharpened it on a set of Bester sharpening stones (700#, 1000#, 1200#), finished it off with a light stropping, and ended up with one seriously sharp knife. You can bet more info on our Bester sharpening stones and tips on using them will follow soon. Stay sharp!
